Honey Cornbread Waffles

Cook time: 15 minutes

Servings: 4

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 cup buttermilk or 1 cup milk + 1 tablespoon vinegar as a substitute
  • 0.5 cup melted butter
  • 2 large eggs
  • 0.25 cup honey
  • 0.5 cup corn kernels fresh, frozen, or canned
  • 0.5 cup shredded cheddar cheese optional, for extra flavor
  • 0 non-stick spray or melted butter
  • 0 additional honey for drizzling
  • 0 butter
  • 0 chopped chives or green onions optional

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, melted butter, eggs, and honey until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
  5. Fold in the corn kernels and shredded cheddar cheese (if using) until evenly distributed.
  6. Lightly grease the waffle iron with non-stick spray or a little melted butter.
  7. Pour the batter into the preheated waffle iron, using enough to fill the waffle mold without overflowing (usually about 1/2 to 3/4 cup, depending on the size of your waffle iron).
  8. Cook according to your waffle iron's instructions, usually for 4-5 minutes, or until the waffles are golden brown and crispy on the edges.
  9. Serve the waffles hot, drizzled with additional honey and a pat of butter. Sprinkle with chopped chives or green onions for a pop of color and extra flavor, if desired.
