Instructions
- Prepare the Caesar dressing by whisking together mayonnaise, Dijon mustard, olive oil, Worcestershire sauce, lemon juice, freshly minced garlic, salt, black pepper, and freshly grated Parmesan cheese in a mixing bowl until smooth and creamy.
- Reserve a portion of the Caesar dressing in a squeeze bottle or bowl for easy taco drizzling during assembly.
- Finely dice the romaine lettuce and shave or shred the Parmesan cheese for the salad component. Set aside.
- Toast a small handful of panko breadcrumbs in a dry skillet over medium heat until golden brown and fragrant, stirring regularly. Transfer to a small bowl and let cool for garnish.
- Divide the minced chicken into ten equal portions and gently press each into a thin, even layer covering one side of each mini tortilla, extending to the edges.
- Season the exposed chicken layer on each tortilla evenly with salt, freshly ground black pepper, and garlic powder.
- Press the meat side of each tortilla into a shallow bowl of panko breadcrumbs, ensuring a solid, even coating.
- Heat a nonstick skillet or griddle over medium heat. Add a thin layer of oil and let it get hot until shimmering but not smoking.
- Place the prepared tortillas, chicken side down, into the skillet in batches (do not overcrowd). Cook for 2-3 minutes, pressing gently, until the panko is deep golden and chicken is cooked through.
- Flip each taco and cook the tortilla side for 1-2 minutes until lightly crisped and warm. Remove and keep warm on a wire rack (not directly on a plate) for optimal crispness.
- In a bowl, toss the diced romaine lettuce with a small amount of Caesar dressing to coat lightly, adding shaved Parmesan to taste.
- To assemble, top each crispy chicken taco with a generous mound of Caesar salad, sprinkle with extra shaved Parmesan and the toasted panko breadcrumbs for crunch.
- Drizzle or dot tacos with reserved Caesar dressing. Add a crack of fresh black pepper if desired.
- Serve tacos immediately while the chicken and panko are hot and crispy, garnishing the plate with a wedge of lemon and extra shaved Parmesan for restaurant-worthy presentation.
