Instructions

  1. In a large mixing bowl, combine ground chicken with garlic powder, onion powder, paprika, white pepper, and salt. Mix just until homogenous, being careful not to overwork the meat.
  2. Divide the chicken mixture into three equal portions. With lightly oiled hands, shape each into a thin, flat patty slightly larger than your burger buns (about 4.5–5 inches wide). Place patties on a parchment-lined tray.
  3. Chill patties in the freezer for 10 minutes to firm up, making them easier to handle and resulting in a juicier patty.
  4. While patties chill, set up a breading station: Place all-purpose flour in a shallow dish for dry coating.
  5. In a separate bowl, whisk together all-purpose flour, cold water, and a pinch of salt to form a smooth, slightly runny batter.
  6. Dredge each chilled patty first in the dry flour, coating all sides and shaking off excess.
  7. Dip each floured patty into the batter to coat, then let the excess drip off. Place on a wire rack or tray.
  8. Heat 1 inch of vegetable oil in a large skillet or Dutch oven to 350°F (175°C). Carefully lower patties into the oil and fry, flipping once, until golden brown and fully cooked (about 3–4 minutes per side). Transfer to a wire rack to drain.
  9. Meanwhile, make the sauce: In a small bowl, whisk together mayonnaise, Dijon mustard, pickle juice, garlic powder, and black pepper until smooth and creamy.
  10. Shred crisp iceberg lettuce and set aside. For added finesse, keep lettuce chilled until serving for maximum crunch.
  11. Slice and lightly toast the burger buns cut-side down in a dry pan or under a broiler until golden.
  12. To assemble, spread burger sauce generously on both sides of each bun.
  13. Place one hot, crispy chicken patty on each sauced bun base. Top with a generous mound of shredded lettuce. Cap with the bun.
  14. Serve immediately. For restaurant-worthy plating, cut the burger in half to show off the crunchy chicken and vibrant lettuce. Garnish with a sprinkle of paprika or black pepper for color.
