Chicken Alfredo Gnocchi

Ingredients
- 2 Tbsp olive oil
- 1 lb chicken breast
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- 0 to taste salt and pepper
- 4 Tbsp unsalted butter
- 2 thinly sliced shallots
- 3 cloves garlic
- 3 Tbsp flour
- 0.5 cup chicken broth
- 2 cups milk
- 0.5 cup heavy cream
- 1 lb uncooked potato gnocchi
- 1.5 cups shredded mozzarella cheese
- 0.5 cup parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breast with garlic powder, Italian seasoning, salt, and pepper, then add to the skillet and cook until done. Remove from skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the shallots and garlic, and cook until softened.
- Stir in the flour until it forms a paste, then gradually whisk in the chicken broth, milk, and heavy cream. Bring to a simmer.
- Add the uncooked gnocchi to the skillet and simmer until the gnocchi is cooked through.
- Stir in the cooked chicken, shredded mozzarella cheese, and parmesan cheese until the cheese is melted and the chicken is heated through.
