Chicken Alfredo Gnocchi

Ingredients

  • 2 Tbsp olive oil
  • 1 lb chicken breast
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • 0 to taste salt and pepper
  • 4 Tbsp unsalted butter
  • 2 thinly sliced shallots
  • 3 cloves garlic
  • 3 Tbsp flour
  • 0.5 cup chicken broth
  • 2 cups milk
  • 0.5 cup heavy cream
  • 1 lb uncooked potato gnocchi
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breast with garlic powder, Italian seasoning, salt, and pepper, then add to the skillet and cook until done. Remove from skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the shallots and garlic, and cook until softened.
  4. Stir in the flour until it forms a paste, then gradually whisk in the chicken broth, milk, and heavy cream. Bring to a simmer.
  5. Add the uncooked gnocchi to the skillet and simmer until the gnocchi is cooked through.
  6. Stir in the cooked chicken, shredded mozzarella cheese, and parmesan cheese until the cheese is melted and the chicken is heated through.
