Gochujang Chicken Salad

A delicious chicken salad with a spicy, sweet, and tangy gochujang dressing, served on toasted bread with thinly sliced cabbage.

Gochujang Chicken Salad

Servings: 4

Ingredients

  • 6 cups cold water
  • 4 Tbsp soy sauce
  • 2 Tbsp salt
  • 3 Tbsp sugar
  • 0.5 inch piece ginger
  • 5 whole scallions
  • 2 cloves garlic
  • 4 whole chicken breasts
  • 2 tsp sesame oil
  • 1 bunch scallions
  • 1.75 cups mayo
  • 0.33 cup gochujang
  • 5 Tbsp agave
  • 2 tsp salt
  • 4 whole chicken breasts

Instructions

  1. Combine all ingredients except the chicken in a pot and whisk them together.
  2. Add the chicken to the pot and slowly bring the mixture to a boil.
  3. Once boiling, cover the pot and remove it from the heat. Let it sit for 1 hour.
  4. Place the pot in the fridge until the chicken is cool.
  5. Strain the chicken and reserve the cooking broth for later use.
  6. Combine all ingredients except the chicken for the salad in a bowl and whisk them well.
  7. Add the cooled, chopped chicken into the bowl with the salad ingredients. Mix well and taste for seasoning, adding more gochujang if desired.
  8. Serve the salad in toasted bread with thinly sliced cabbage seasoned with oil, salt, and lime.
