Gochujang Chicken Salad
A delicious chicken salad with a spicy, sweet, and tangy gochujang dressing, served on toasted bread with thinly sliced cabbage.

Ingredients
- 6 cups cold water
- 4 Tbsp soy sauce
- 2 Tbsp salt
- 3 Tbsp sugar
- 0.5 inch piece ginger
- 5 whole scallions
- 2 cloves garlic
- 4 whole chicken breasts
- 2 tsp sesame oil
- 1 bunch scallions
- 1.75 cups mayo
- 0.33 cup gochujang
- 5 Tbsp agave
- 2 tsp salt
- 4 whole chicken breasts
Instructions
- Combine all ingredients except the chicken in a pot and whisk them together.
- Add the chicken to the pot and slowly bring the mixture to a boil.
- Once boiling, cover the pot and remove it from the heat. Let it sit for 1 hour.
- Place the pot in the fridge until the chicken is cool.
- Strain the chicken and reserve the cooking broth for later use.
- Combine all ingredients except the chicken for the salad in a bowl and whisk them well.
- Add the cooled, chopped chicken into the bowl with the salad ingredients. Mix well and taste for seasoning, adding more gochujang if desired.
- Serve the salad in toasted bread with thinly sliced cabbage seasoned with oil, salt, and lime.
