Ingredients
- 0 parchment paper for lining pan
- 110 grams unsalted butter cubed
- 4 fresh sage leaves finely chopped
- 0 fine mesh sieve for straining
- 150 grams granulated sugar
- 2 lemon zest from 2 lemons
- 0 brown butter cooled, sage-infused
- 2 eggs room temperature
- 2 tablespoons lemon juice freshly squeezed
- 125 grams all-purpose flour
- 0.5 teaspoon salt
- 0.25 teaspoon baking powder
- 0 offset spatula for smoothing
- 0 wire rack for cooling
- 60 grams powdered sugar
- 1 tablespoon lemon juice freshly squeezed
- 0.5 teaspoon fresh sage leaves finely minced (optional, for fusion twist)
- 0 crispy sage leaves optional, for garnish
- 0 lemon zest optional, for garnish
Instructions
- Preheat your oven to 175°C (350°F). Line an 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.
- In a small saucepan over medium-low heat, melt the butter with the chopped sage leaves. Allow the butter to foam and brown slightly, swirling occasionally until aromatic and golden.
- Pour the brown butter through a fine mesh sieve to remove the sage solids. Set aside and let cool to room temperature.
- In a medium bowl, combine the granulated sugar and lemon zest. Massage them together with your fingers until the sugar is fragrant and pale yellow.
- Add the cooled brown butter to the sugar-zest mixture. Whisk until fully combined and slightly thickened.
- Whisk in the eggs, one at a time, followed by the lemon juice. Mix until the batter looks smooth and glossy.
- In a separate bowl, whisk together the flour, salt, and baking powder. Gently fold the dry ingredients into the wet mixture until just combined.
- Transfer the batter into the prepared pan and smooth the surface with an offset spatula.
- Bake for 20–25 minutes, rotating the pan halfway through. Brownies are ready when the edges are set, and a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely in the pan on a wire rack before glazing.
- While brownies cool, make the glaze: whisk together powdered sugar, lemon juice, and a pinch of finely chopped sage in a small bowl until smooth and pourable.
- Remove brownies from the pan using the parchment handles. Pour the glaze over the cooled brownies, gently spreading it to the edges with a spatula.
- Allow the glaze to set for at least 20 minutes. Once set, slice into neat squares using a clean, sharp knife.
- For extra presentation, garnish with crispy sage leaves, microplaned lemon zest, or thin lemon slices before serving.
