Cook time: 30 minutes
Servings: 9
Ingredients
- 115 g melted butter
- 100 g granulated sugar
- 65 g light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 120 g all-purpose flour
- 30 g unsweetened cocoa powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 120 g dark chocolate or semisweet chocolate chips
- 9 marshmallows
- 9 graham crackers
- 9 ghost mallows
Instructions
- Whisk melted butter and sugars until it looks like wet sand.
- Add egg and vanilla, whisk until smooth and combined.
- Sift in flour, cocoa powder, baking soda, and salt. Fold until almost combined.
- Fold in chocolate chips.
- Scoop dough into 60g portions or 3 tbsp each (yields 9 cookies), then push one marshmallow in the center, then cover the mallows with the dough. Chill this for at least 2 hours (or overnight for the best flavor and thicker cookies).
- Once ready to bake, preheat oven to 180°C (350°F).
- In a parchment lined baking pan, place dough balls on top of a graham cracker, about 2 inches apart.
- Bake for 9–11 minutes, until the edges are set but the centers still look slightly soft.
- Top with ghost mallows.
- Let cool on the tray for 10 minutes to set.
