Pineapple Ginger Mocktail

This nonalcoholic drink combines pineapple juice, ginger ale, lime juice, and mint, then is finished with ice and a mint garnish. It is built by stirring the juices together first, then adding ginger ale just before serving so the carbonation stays lively.

Pineapple Ginger Mocktail

Servings: 4

Ingredients

  • 8 count fresh mint leaves lightly bruised, plus extra for garnish
  • 480 ml pineapple juice chilled
  • 30 ml lime juice freshly squeezed
  • 480 ml ginger ale chilled
  • 240 g ice for serving

Instructions

  1. Bruise 8 mint leaves gently with your fingers or the back of a spoon to release aroma, then add them to a pitcher. The mint smells fragrant but is still mostly intact.
  2. Add 480 ml pineapple juice and 30 ml lime juice to the pitcher. Stir once to combine. The mixture looks evenly blended.
  3. Pour in 480 ml chilled ginger ale and stir very gently 2 to 3 times to keep the bubbles. The drink is visibly fizzy with a light foam at the surface.
  4. Divide 240 g ice among 4 glasses, then pour the mocktail over the ice. Each glass is cold and filled to a similar level.
  5. Garnish each glass with a mint leaf or small mint sprig if desired, then serve immediately. The mocktail is cold, fizzy, and aromatic.
