Air Fryer Chicken Tikka Bowl

Cook time: 76 minutes

Servings: 4

Ingredients

  • 600 g chicken thighs, boneless and skinless
  • 3 tbsp tikka paste
  • 3 tbsp Greek yoghurt
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 whole lemon, juiced
  • 0.5 tsp chilli powder
  • 0.5 tsp red food colouring
  • 1 handful coriander
  • 1 handful mint
  • 1 whole lime, squeezed
  • 1 whole lemon, squeezed
  • 1 whole crushed garlic clove
  • 5.5 tbsp Greek yoghurt
  • 1 bowl cooked rice
  • 1 tbsp chopped coriander

Instructions

  1. To a bowl add your chicken thighs and all of the ingredients for the marinade and give that a good mix. Leave that in the fridge to marinate for an hour or ideally, overnight.
  2. Pop the chicken into the air fryer for 16 minutes at 200 degrees.
  3. While that is cooking, prepare your green sauce by adding all of the ingredients to a blender and give that a blitz.
  4. Serve the chicken thighs with your green sauce and some cooked rice and top with some chopped coriander.
