Ingredients

  • 75 g chicken breast
  • 1 slice green bell pepper
  • 0.5 whole yellow onion
  • 1 bunch cilantro

  • 1 pinch pepper

  • 1 pinch cumin
  • 1 pinch dried oregano
  • 2 whole roma tomatoes

  • 15 g BBQ sauce

  • 80 g black beans
  • 1 serving pico de gallo
  • 1 serving corn
  • 2 tbsp sour cream
  • 1 whole bell peppers
  • 1 whole onion
  • 1 clove garlic

  • 1 pinch dried oregano

Instructions

  1. Boil 75 g chicken breast in high heat and add a slice of green bell pepper, half a yellow onion, cilantro, two garlic gloves, salt, pepper, garlic powder, cumin, and dried oregano.
  2. Make pico de gallo (roma tomatoes, yellow onion, cilantro, lime juice, salt & pepper).
  3. Dice 127 g yellow potatoes and season with salt, pepper and garlic powder.
  4. Airfry potatoes at 400F for 12-15 minutes.
  5. Shred chicken breast.
  6. Toss in 15 g (or 3 tbsp if making multiple servings) of BBQ sauce and mix in with chicken.
  7. Serve potatoes in a bowl and add in chicken, black beans, pico, corn and sour cream.
  8. In a pot add in chopped bell peppers, onion and minced garlic. Cook in medium heat until soft and cooked.
  9. Add in canned beans (do not rinse). In the same can, fill with water and add water to pot.
  10. Season beans with pepper, cumin, dried oregano & more salt if needed. Add in chopped cilantro.
  11. Bring to a boil and then simmer for 30-60 minutes.
