Cranberry Mint Mojito

Servings: 4

Ingredients

  • 20 g fresh mint leaves plus extra small sprigs for garnish
  • 60 ml lime juice freshly squeezed
  • 30 ml simple syrup cool
  • 480 ml cranberry juice chilled
  • 600 g ice cubes for serving
  • 480 ml soda water chilled
  • 4 slices lime slices for garnish

Instructions

  1. Divide the mint leaves between the 4 serving glasses or place them all in the pitcher. Add the lime juice and simple syrup, then muddle gently just until the mint is fragrant and lightly bruised. The mint smells fresh and the lime-syrup mixture is aromatic, with no torn-beyond-repair leaves.
  2. Add the cranberry juice and stir well to combine. The mixture is evenly pink-red and the syrup is fully dissolved.
  3. Fill each glass with ice, or add the measured ice to the pitcher if serving from there. Top with soda water and stir once or twice to preserve the bubbles. The drink is thoroughly chilled and visibly fizzy.
  4. Garnish each glass with a lime slice and a small mint sprig, then serve immediately. Each glass has a citrus garnish and a fresh mint aroma.
