Servings: 4
Ingredients
- 300 g Mixed berries Rinsed; if large, halved
- 20 g Granulated sugar None
- 30 ml Lemon juice Freshly squeezed
- 600 ml Sparkling water Chilled
- 240 g Ice For serving
- 8 g Fresh mint leaves Lightly slapped
Instructions
- Put the berries and sugar in a mixing bowl. Muddle lightly until some juices are released and the sugar starts dissolving; do not puree. Stir in the lemon juice. The berries look glossy and juicy, with some pieces broken down but still visible.
- Transfer the mixture to a pitcher. If you want a smoother drink, strain it through a fine-mesh strainer; otherwise keep the fruit in the pitcher. The berry mixture is evenly combined and ready for dilution.
- Add the chilled sparkling water and stir gently once or twice to combine without losing too much carbonation. The drink looks evenly pink-red and lightly fizzy.
- Divide the ice among 4 glasses, then pour in the sparkler. Garnish with mint leaves if using. Each glass is cold, fizzy, and topped with visible berry color and optional mint.
