- 0.75 teaspoon kosher salt for streusel; for espresso filling; for cake batter
- 1 cup mashed banana from 2-3 medium bananas
- 0.5 cup sour cream
- 0.25 cup neutral oil
- 0.25 cup unsalted butter melted and cooled to room temperature
- 2 whole eggs
- 1 teaspoon vanilla extract for cake batter; for glaze
- 0.5 cup powdered sugar for glaze
- 1.5 tablespoon maple syrup for glaze
- 0.5 teaspoon vanilla extract for cake batter; for glaze
Instructions
- Heat the oven to 350°F. Grease an 8-by-8-inch square baking pan and line it with parchment, leaving overhang on all sides. Oven is preheated and pan is lined.
- Make the streusel: combine the sugar, flour, walnuts, cinnamon, nutmeg, salt, and cold cubed butter. Work in the butter with your fingers until pea-sized crumbs form, then chill. Streusel is crumbly and chilled.
- Make the espresso filling: mix the brown sugar, espresso powder, cinnamon, and salt until evenly combined. Filling is mixed.
- Make the cake batter: whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Dry ingredients are combined.
- In a large bowl, whisk the mashed banana, sour cream, oil, melted butter, eggs, and vanilla until smooth. Add the dry ingredients and mix just until combined. Batter is just combined.
- Spread a little more than half the batter in the pan. Sprinkle the espresso filling evenly over it, then cover with the remaining batter and smooth the top. Filling is layered between batter.
- Top with the chilled streusel and bake for 45 to 50 minutes, until a skewer inserted in the center comes out clean. Cool in the pan on a rack. Cake is baked through and cooled.
- Make the glaze by stirring together the powdered sugar, maple syrup, and vanilla until smooth, then drizzle over the cooled cake. Let it set briefly before slicing into 9 pieces. Glaze is set and cake is sliced.
