Tuscan Chicken and Ricotta Rotolos (Marry Me Chicken Lasagna Roll-Ups)

Ingredients

  • 4 chicken thighs boneless, skinless
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup all-purpose flour
  • 2 tbsp avocado oil
  • 12 sheets lasagna noodles
  • 1 cup ricotta cheese
  • 0.5 cup cream cheese
  • 1 large egg
  • 0.5 tsp oregano
  • 0.5 cup asiago cheese grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 shallots diced
  • 4 cloves garlic minced
  • 0.5 tsp red chili flakes
  • 1 cup chicken broth
  • 2 cups spinach fresh
  • 2 cups heavy whipping cream
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup basil fresh, torn

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken thighs on both sides with salt and pepper. Dredge them in flour, ensuring both sides are coated.
  3. Heat avocado oil in a large skillet over medium-high heat. Sear the chicken thighs on both sides until golden brown, about 5 minutes per side. Remove and set aside.
  4. Cook lasagna noodles according to the package instructions. Drain and set aside.
  5. In a bowl, mix the ricotta, cream cheese, egg, oregano, asiago cheese, salt, and pepper until well combined.
  6. In the same skillet used for the chicken, sauté the shallots and garlic over medium heat for 2-3 minutes until fragrant. Add red pepper flakes and cook for another 1 minute.
  7. Deglaze the skillet with chicken broth, scraping up any brown bits from the bottom. Add spinach and cook until wilted.
  8. Slowly stir in heavy cream. Reserve about 2 cups of the sauce.
  9. Add the seared chicken back to the skillet along with grated parmesan. Season with salt and pepper to taste.
  10. Lay cooked lasagna noodles on a sheet tray. Spread each noodle with a layer of ricotta mixture, a layer of the sauce mixture, some shredded cheese, and broken basil leaves. Roll up each noodle and place them either standing up or on their sides in a baking dish.
  11. Garnish with additional cheese and basil if desired. Bake in the preheated oven for 25-30 minutes until bubbly and golden.
