Chicken Gnocchi Soup

Ingredients

  • 1 lb boneless chicken breast, shredded
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tsp olive oil
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp olive oil
  • 1 cup carrots, diced
  • 2 stalks celery stalks, diced
  • 1 onion yellow onion, diced
  • 6 cloves garlic cloves, minced
  • 4 cups chicken stock
  • 2 cups whole milk
  • 1.5 cup heavy cream
  • 2 oz cream cheese
  • 0.25 cup flour
  • 0.5 tbsp chicken bouillon paste
  • 16 oz gnocchi
  • 2 cups spinach, chopped
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp oregano
  • 1 tsp basil
  • 0.5 tsp thyme
  • 0.5 tsp nutmeg
  • 1 to taste salt
  • 1 to taste pepper
  • 1 for garnish bacon
  • 1 for garnish parsley

Instructions

  1. Marinate the shredded chicken breast with garlic powder, onion powder, oregano, basil, thyme, smoked paprika, salt, black pepper, and olive oil. Let it sit for at least 30 minutes.
  2. Heat butter and olive oil in a pan. Add the marinated chicken and cook until it's fully cooked.
  3. In a separate pot, heat olive oil. Add diced carrots, celery, onion, and minced garlic. Cook until the vegetables are tender.
  4. Add chicken stock, whole milk, heavy cream, cream cheese, flour, and chicken bouillon paste to the pot. Stir until the cream cheese is melted and the soup is thickened.
  5. Add the cooked chicken, gnocchi, chopped spinach, garlic powder, onion powder, oregano, basil, thyme, nutmeg, salt, and pepper to the soup. Stir well and let it simmer until the gnocchi is cooked.
  6. Garnish the soup with bacon and parsley before serving.
