Caramel Apple Sourdough Coffee Cake

Ingredients

  • 0.33 cup flour
  • 0.33 cup brown sugar
  • 0.5 tsp cinnamon
  • 1 pinch salt
  • 0.25 cup cold butter
  • 1 cup sourdough discard
  • 0.5 cup milk
  • 0.33 cup melted butter
  • 1 tsp vanilla extract
  • 0.5 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp cinnamon
  • 1 medium apple
  • 0.5 cup homemade caramel sauce
  • 1 bit extra caramel

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.
  2. Make the crumb topping: In a small bowl, mix flour, brown sugar, cinnamon, and salt. Cut in the butter until crumbly and sandy in texture. Place in the fridge while you make the cake batter.
  3. Mix the wet ingredients: In a large bowl, whisk together sourdough discard, milk, melted butter, vanilla, and brown sugar until smooth.
  4. Add the dry ingredients: Sprinkle flour, baking soda, baking powder, salt, and cinnamon over the wet mixture. Stir until just combined, don’t overmix.
  5. Assemble the cake: Pour half the batter into the prepared pan and spread evenly. Spoon half the caramel sauce over top and swirl gently with a knife. Add the remaining batter, drizzle the rest of the caramel, and swirl again for a marbled effect.
  6. Top and bake: Evenly sprinkle the crumb topping over the batter. Bake for 35–40 minutes, until golden and a toothpick comes out clean.
  7. Cool and drizzle (optional): Once slightly cooled, drizzle with a bit of extra caramel before serving.
