Caramel Apple Sourdough Coffee Cake

Ingredients
- 0.33 cup flour
- 0.33 cup brown sugar
- 0.5 tsp cinnamon
- 1 pinch salt
- 0.25 cup cold butter
- 1 cup sourdough discard
- 0.5 cup milk
- 0.33 cup melted butter
- 1 tsp vanilla extract
- 0.5 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 0.25 tsp salt
- 1 tsp cinnamon
- 1 medium apple
- 0.5 cup homemade caramel sauce
- 1 bit extra caramel
Instructions
- Preheat the oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.
- Make the crumb topping: In a small bowl, mix flour, brown sugar, cinnamon, and salt. Cut in the butter until crumbly and sandy in texture. Place in the fridge while you make the cake batter.
- Mix the wet ingredients: In a large bowl, whisk together sourdough discard, milk, melted butter, vanilla, and brown sugar until smooth.
- Add the dry ingredients: Sprinkle flour, baking soda, baking powder, salt, and cinnamon over the wet mixture. Stir until just combined, don’t overmix.
- Assemble the cake: Pour half the batter into the prepared pan and spread evenly. Spoon half the caramel sauce over top and swirl gently with a knife. Add the remaining batter, drizzle the rest of the caramel, and swirl again for a marbled effect.
- Top and bake: Evenly sprinkle the crumb topping over the batter. Bake for 35–40 minutes, until golden and a toothpick comes out clean.
- Cool and drizzle (optional): Once slightly cooled, drizzle with a bit of extra caramel before serving.
