Modern Caramel Apple Bark with Coconut & Peanut Butter Caramel

Cook time: 30 minutes

Servings: 10

Ingredients

  • 0 parchment paper for lining
  • 2 apple Honeycrisp or Granny Smith preferred, diced
  • 0 lemon juice freshly squeezed
  • 0 apple from previous step
  • 0 dark chocolate good quality, chopped or chips
  • 0 coconut oil virgin or refined
  • 0 melted dark chocolate mixture from previous step
  • 0 pretzel roughly chopped
  • 0 diced apples from previous step
  • 0 caramel bits or individually wrapped caramels, unwrapped
  • 0 milk
  • 0 butter unsalted, room temperature
  • 0 peanut butter creamy, unsweetened preferred
  • 0 peanut butter caramel from previous step
  • 0 remaining melted dark chocolate from earlier
  • 0 sea salt fine, for garnish
  • 0 coconut toasted coconut flakes
  • 0 lemon zest optional, for garnish
  • 0 coconut optional, extra flakes

Instructions

  1. Line a rimmed baking sheet with parchment paper to create a clean, nonstick base for the bark.
  2. Rinse and dry your apples thoroughly, then dice them into small, even cubes (about 1/4 inch) for optimal texture and even layering.
  3. Toss the diced apples gently with fresh lemon juice in a bowl to prevent browning and add brightness.
  4. Spread the apples out on a clean kitchen towel and gently pat them dry to remove excess moisture.
  5. In a heatproof bowl, combine dark chocolate and coconut oil. Melt using a double boiler or in short intervals in the microwave, stirring frequently, until fully smooth and glossy.
  6. Pour about two-thirds of the melted chocolate onto the prepared baking sheet, spreading to a 1/4-inch-thick layer with an offset spatula.
  7. Scatter pretzel pieces evenly over the chocolate base, pressing gently so they adhere.
  8. Layer the dried apple cubes over the pretzels, distributing them evenly to ensure consistent bites throughout.
  9. In a small saucepan, combine caramel bits and milk. Heat gently over low, stirring constantly, until the caramel is melted and smooth. Remove from heat and stir in butter and peanut butter until fully incorporated.
  10. Drizzle generous ribbons of the peanut butter caramel mixture over the apples and pretzels, ensuring all areas are covered.
  11. Drizzle most of the remaining melted chocolate over the bark in decorative stripes, reserving a small amount for final touch-ups if desired.
  12. Sprinkle a touch of fine sea salt and toasted coconut flakes over the top for added texture, flavor complexity, and a professional finish.
  13. Transfer the tray to the freezer and chill until fully set and firm, about 20 minutes.
  14. Once set, lift the bark from the tray using the parchment. Use a sharp chef’s knife, warmed under hot water and dried, to cut the bark into irregular pieces for a modern, rustic presentation.
  15. Arrange the bark pieces on a serving platter, optionally garnishing with extra coconut flakes or microplaned lemon zest for a final pop of color and aroma.
