Maple, Ginger, Thyme Squash & Sweet Potatoes with Italian Sausage
A delightful mix of sweet potatoes, squash, and Italian sausage, flavored with a unique blend of maple, ginger, and thyme. This dish is gluten-free and dairy-free, perfect for any occasion.

Ingredients
- 0.5 cup olive oil
- 0.5 cup maple syrup
- 2 tbsp ginger
- 2 tbsp fresh thyme
- 1 tsp salt
- 1.5 lbs sweet potatoes
- 0.33 portion sauce
- 1 whole red onion
- 1.5 lbs delicata or other squash
- 0.5 remaining portion sauce
- 1 tbsp olive oil
- 1.5 lbs chicken or pork hot italian sausage
- 1.5 lbs sausage
- 1 remaining portion sauce
Instructions
- Preheat oven to 425°F. To make sauce, combine all ingredients in a small bowl and whisk well.
- Add potatoes to a large bowl and pour ⅓ of your sauce over the potatoes. Toss until fully coated then transfer to parchment lined baking sheet and roast for 20 minutes.
- Remove from oven and add onions and squash to baking sheet then pour half of the remaining sauce over the veggies and toss well. Flip potatoes and return to oven for 20 minutes longer.
- While veggies are cooking, add 1 tbsp olive oil to a large skillet over medium heat. Remove raw sausage from casing and break into bite sized pieces like small meatballs. Brown meat on all sides then remove from pan and set aside.
- Remove veggies from oven, add in sausage and flip veggies. Return to oven for final 10 minutes of cooking for a total of 50 minutes.
- Transfer to serving dish and drizzle remaining sauce over top before serving.
