Pumpkin Pie Milkshake

This American-inspired milkshake blends pumpkin purée and pie spices into vanilla ice cream, then tops the drink with whipped cream for a dessert-style finish. It is built to be spoonable through a straw and should taste like chilled pumpkin pie in liquid form.

Pumpkin Pie Milkshake

Servings: 2

Ingredients

  • 360 g vanilla ice cream slightly softened
  • 120 g pumpkin purée plain, unsweetened
  • 180 ml milk cold
  • 15 g brown sugar packed
  • 1 g ground cinnamon
  • 0.5 g ground ginger
  • 0.25 g ground nutmeg
  • 5 ml vanilla extract
  • 60 g whipped cream for topping
  • 0.5 g ground cinnamon for garnish

Instructions

  1. Add the vanilla ice cream, pumpkin purée, milk, brown sugar, ground cinnamon, ground ginger, ground nutmeg, and vanilla extract to the blender. All ingredients are in the blender and the mixture is evenly distributed around the blades.
  2. Blend on high until completely smooth and thick, stopping once or twice to scrape down the sides if needed. The mixture looks uniform, pale orange, and pourable but still thick enough to mound slightly when poured.
  3. Divide the milkshake between 2 tall glasses, then top each with whipped cream and a light dusting of ground cinnamon. The glasses are filled and topped with a visible whipped cream cap and a fine spice garnish.
