Apple Ginger Mocktail

Servings: 2

Ingredients

  • 240 g ice for serving
  • 360 ml apple juice chilled
  • 30 ml lime juice freshly squeezed
  • 10 ml simple syrup optional, for a sweeter drink
  • 240 ml ginger beer chilled
  • 80 g apple thinly sliced
  • 2 g mint leaves lightly bruised, for garnish

Instructions

  1. Divide 240 g ice between 2 tall glasses. The glasses are cold and about halfway filled with ice.
  2. In a small pitcher, combine 360 ml chilled apple juice, 30 ml lime juice, and 10 ml simple syrup if you want a sweeter mocktail. Stir briefly. The base tastes balanced between apple and lime, with no syrup granules or streaks.
  3. Add 240 ml chilled ginger beer and stir once or twice just to combine, keeping the fizz. The drink is evenly mixed and still bubbly.
  4. Pour the mocktail over the ice in the 2 glasses, then top each with apple slices and mint leaves if using. Each glass is full, fizzy, and garnished with visible apple slices.
