Instructions

  1. Prepare your mise en place: Set out all ingredients, ensuring butter and cream cheese are fully softened, and eggs are at room temperature for optimal emulsification.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream the softened butter and cream cheese together on medium speed until fully combined and smooth.
  3. Add the brown sugar and granulated sugar to the bowl. Cream on medium speed for 2–3 minutes, until the mixture turns light and fluffy.
  4. Scrape down the sides of the bowl with a spatula. Add the egg and vanilla bean paste. Mix on medium-low speed until the mixture is emulsified and smooth.
  5. In a separate bowl, whisk together the flour, salt, baking soda, and cornstarch to evenly distribute leaveners.
  6. With the mixer on low, add the dry ingredients to the wet, mixing until just a few streaks of flour remain. Do not overmix.
  7. Gently fold in the chopped Oreo cookies using a spatula, ensuring even distribution without breaking them down too finely.
  8. Using a cookie scoop or scale, portion the dough into 1.5 oz (about 50g) balls. Place on a parchment-lined baking sheet, spacing evenly. Refrigerate for 1–2 hours.
  9. Preheat the oven to 350°F (175°C) with a rack in the center.
  10. Right before baking, press each dough ball gently to form a thick disc about ¾ inch high for uniform shape.
  11. Bake the cookies for 11–13 minutes, until edges are lightly golden, centers are set but appear slightly underbaked and pale.
  12. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Optionally, sprinkle lightly with flaky sea salt for balance.
  13. While cookies are cooling, prepare the Oreo-infused white chocolate: Separate the Oreos, scraping the cream filling into a bowl with the white chocolate. Crush the cookie halves into fine crumbs using a food processor or zip bag and rolling pin.
  14. Melt the white chocolate and Oreo cream filling together in a microwave-safe bowl in 20-second bursts, stirring between intervals, or over a double boiler until smooth and fluid.
  15. Stir the fine Oreo cookie crumbs into the melted white chocolate mixture until evenly distributed.
  16. Spoon about 1 tablespoon of the Oreo-white chocolate mixture onto a piece of parchment. Immediately press a cooled cookie onto it, letting the chocolate spread to the cookie’s edges. Repeat with remaining cookies.
  17. Allow the cookies to rest for 3–5 minutes, or until the white chocolate has set. For a plated touch, drizzle extra melted Oreo-white chocolate over the top and garnish with a few reserved Oreo crumbs.
