Mini Apple Fritters with Warm Vanilla Oat Glaze

Cook time: 35 minutes

Servings: 10

Ingredients

  • 2 apple peeled and diced
  • 1.5 cups all-purpose flour
  • 0.3125 cups white sugar 1/4 cup plus 1 tbsp
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0 nutmeg Pinch
  • 2 egg
  • 0.333 cup oat milk
  • 3 tbsp plant-based yogurt unsweetened recommended
  • 2 apple already diced
  • 0 neutral oil vegetable or canola
  • 2.5 cups powdered sugar
  • 0.3125 cup oat milk 1/4 cup plus 1 tbsp
  • 1 tsp vanilla extract
  • 0 cinnamon for garnish (optional)
  • 0 plant-based yogurt for plating (optional)
  • 0 apple thinly sliced, for garnish (optional)

Instructions

  1. Peel and dice the apples into small, even-sized cubes.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until thoroughly combined.
  3. In a separate bowl, whisk together the eggs, oat milk, and plant-based yogurt until smooth.
  4. Pour the wet mixture into the bowl with dry ingredients. Gently fold together with a spatula just until no dry streaks remain.
  5. Fold in the diced apples until fully incorporated throughout the batter.
  6. Line a sheet pan with paper towels and set a wire rack on top, ready for draining the fritters after frying.
  7. Pour neutral oil into a deep skillet to a depth of about 1 inch. Heat over medium heat until oil reaches 350°F (177°C).
  8. Using two spoons or a small ice cream scoop, drop 1 to 2 tablespoon-sized mounds of batter gently into the hot oil. Fry in small batches to avoid crowding.
  9. Fry each fritter for about 3 minutes per side, turning carefully with a slotted spoon until deep golden brown and crisp.
  10. Remove the fritters with a slotted spoon and transfer to the prepared wire rack to drain and cool slightly.
  11. While the fritters cool, whisk together the powdered sugar, oat milk, and vanilla extract in a bowl until the glaze is smooth and pourable.
  12. Dip each warm fritter into the glaze, turning to coat completely. Let excess glaze drip off, then return fritters to the wire rack to set.
  13. Plate the mini apple fritters stacked or in a crescent shape for a modern presentation. Garnish with a light sprinkle of cinnamon if desired.
  14. Serve immediately while the fritters are warm and crisp with coffee or your favorite brunch beverage.
