Spiced Cranberry Sauce with Orange Zest

A compact Thanksgiving side made from fresh cranberries cooked just until they burst, then finished with orange zest for a cleaner citrus note. The sauce sets as it cools and serves cold or cool alongside turkey and other savory dishes.

Spiced Cranberry Sauce with Orange Zest

Cook time: 15 minutes

Servings: 8

Ingredients

  • 340 g fresh cranberries rinsed and picked over
  • 150 g granulated sugar
  • 120 ml orange juice freshly squeezed or bottled
  • 60 ml water
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.25 tsp ground ginger
  • 0.25 tsp fine salt
  • 2 tsp orange zest finely grated

Instructions

  1. Combine the cranberries, sugar, orange juice, water, cinnamon, cloves, ginger, and salt in a medium saucepan. The mixture is evenly combined and the sugar is mostly moistened.
  2. Bring to a simmer over medium heat, then reduce to medium-low and cook, stirring occasionally and pressing lightly on some berries as they burst. Most cranberries have burst and the sauce looks glossy and slightly thickened, about 10 to 12 minutes.
  3. Stir in the orange zest and simmer 1 minute more. The zest is fragrant and distributed through the sauce.
  4. Remove from the heat and let cool in the pan for 10 minutes, then transfer to a bowl or container and chill. The sauce thickens further as it cools and coats a spoon in a loose, jammy layer.
