Spicy Ginger Pear Mocktail

Servings: 4

Ingredients

  • 3 medium ripe pears cored and chopped
  • 120 ml cold water for blending
  • 60 ml fresh lime juice from 2 limes
  • 480 g ice cubes for serving
  • 600 ml ginger beer chilled
  • 4 slices pear slices for garnish

Instructions

  1. Put the chopped pears and cold water into a blender. Blend until completely smooth, then strain the mixture through a fine-mesh strainer into a large pitcher to remove pulp. The liquid in the pitcher looks smooth and pale, with no large bits of pear remaining.
  2. Stir the fresh lime juice into the pear base in the pitcher. The mixture smells bright and tastes balanced between sweet and tart.
  3. Divide the ice among 4 glasses, then pour the pear-lime base evenly over the ice. Each glass is about half full before the ginger beer is added.
  4. Top each glass with chilled ginger beer, using an equal amount in each glass, then stir once gently to combine. The drink is visibly fizzy and evenly mixed without losing much carbonation.
  5. Garnish each glass with a pear slice, if using, and serve right away. Each drink has a pear garnish and a lively bubble from the ginger beer.
