- 75 g sugar snap peas blended for juice base
- 1.5 g ascorbic acid added to the fruit-and-pea blend
- 0 pectinex (amount not specified) Creator did not specify an amount
- 24 g sugar stirred into clarified juice for cordial
- 1.8 g citric acid stirred into clarified juice for cordial
- 0.9 g malic acid stirred into clarified juice for cordial
- 150 ml apple–peas cordial carbonated base for the cocktail
- 1.5 oz floral gin added to the cocktail
- 0.5 oz Poire Williams added to the cocktail
- 0 ice (amount not specified) Creator did not specify an amount
- 0 sugar snap pea (amount not specified) Creator did not specify an amount
Instructions
- Blend the peeled Granny Smith apples, sugar snap peas, and ascorbic acid until smooth, then strain through a nut milk bag and press out as much juice as possible. Juice is extracted and strained.
- Return the juice to the blender with pectinex, blend briefly, and wait for a clear break. Strain through a coffee filter, returning cloudy liquid to the filter as needed until fully clarified. Juice is clarified.
- For every 300 ml of clarified juice, stir in the sugar, citric acid, and malic acid until fully dissolved, then keep the cordial chilled. Sugars and acids are dissolved.
- Measure 150 ml of apple–peas cordial, the floral gin, and the Poire Williams into a cold cream whipper. Charge with CO2, shake 10 to 15 seconds, vent, charge again, shake again, and chill for a couple of minutes. The drink is carbonated and chilled.
- Fill a highball glass with ice, slowly release the pressure from the whipper, open it, and pour the cocktail. Garnish with a sugar snap pea. Cocktail is poured and garnished.
