  • 0.3333333333333333 cup fresh lemon juice
  • 0.3333333333333333 cup olive oil
  • 0.3333333333333333 cup vegetable stock
  • 2 cloves garlic
  • 2 tsp oregano
  • 1 tbsp yellow mustard
  • 1 tsp salt
  • 1 tsp pepper
  • 5 whole russet potatoes peeled and cut into ¼ length ways

Instructions

  1. Preheat the oven to 450°F. Oven is fully preheated.
  2. In a large bowl, whisk together the lemon juice, olive oil, vegetable stock, garlic, oregano, yellow mustard, salt, and pepper. The mixture is combined evenly.
  3. Place the potatoes in a hotel pan or deep roasting pan without overcrowding, then pour the lemon mixture over them and toss to coat. Potatoes are evenly coated in the liquid.
  4. Cover the pan and bake for 25–28 minutes. Potatoes have started to soften.
  5. Remove the cover, flip the potatoes, and bake for another 20–30 minutes, or until soft. Potatoes are tender and browned at the edges.
