Sticky Smoky Cauliflower with Quinoa & Pea Salad and Green Goddess Dressing

Ingredients

  • 1 tbsp honey or maple syrup
  • 2 tbsp olive oil
  • 1 tsp sweet smoked paprika
  • 1 tsp garlic granules
  • 2 tsp chilli flakes
  • 0 salt to taste
  • 0 pepper to taste
  • 0.5 head cauliflower cut into thick slices
  • 0.5 avocado
  • 1 handful coriander
  • 1 handful basil
  • 2 spring onions green part
  • 0.5 juice of lemon juice
  • 3 tbsp extra virgin olive oil
  • 0 salt to taste
  • 0 pepper to taste
  • 0 dash water
  • 4.2 oz quinoa cooked
  • 3.5 oz peas cooked
  • 2 spring onions white part
  • 1 bunch parsley finely chopped
  • 0 drizzle olive oil
  • 0 squeeze lemon juice
  • 0 salt to taste
  • 0 pepper to taste

Instructions

  1. Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
  2. Prepare the marinade by mixing honey or maple syrup, olive oil, sweet smoked paprika, garlic granules, chilli flakes, salt, and pepper in a bowl.
  3. Brush the marinade onto the cauliflower slices.
  4. Place the cauliflower on a baking tray and roast in the preheated oven for 30-35 minutes until charred around the edges.
  5. Prepare the Green Goddess Dressing by blending avocado, coriander, basil, green part of spring onions, lemon juice, extra virgin olive oil, salt, pepper, and a dash of water until smooth and creamy.
  6. In a separate bowl, mix cooked quinoa, cooked peas, white part of spring onions, parsley, olive oil, lemon juice, salt, and pepper to prepare the salad.
  7. Assemble the dish by adding the quinoa and pea salad to a bowl. Place the roasted cauliflower on top and drizzle with the Green Goddess Dressing.
