Sticky Smoky Cauliflower with Quinoa & Pea Salad and Green Goddess Dressing

Ingredients
- 1 tbsp honey or maple syrup
- 2 tbsp olive oil
- 1 tsp sweet smoked paprika
- 1 tsp garlic granules
- 2 tsp chilli flakes
- 0 salt to taste
- 0 pepper to taste
- 0.5 head cauliflower cut into thick slices
- 0.5 avocado
- 1 handful coriander
- 1 handful basil
- 2 spring onions green part
- 0.5 juice of lemon juice
- 3 tbsp extra virgin olive oil
- 0 salt to taste
- 0 pepper to taste
- 0 dash water
- 4.2 oz quinoa cooked
- 3.5 oz peas cooked
- 2 spring onions white part
- 1 bunch parsley finely chopped
- 0 drizzle olive oil
- 0 squeeze lemon juice
- 0 salt to taste
- 0 pepper to taste
Instructions
- Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
- Prepare the marinade by mixing honey or maple syrup, olive oil, sweet smoked paprika, garlic granules, chilli flakes, salt, and pepper in a bowl.
- Brush the marinade onto the cauliflower slices.
- Place the cauliflower on a baking tray and roast in the preheated oven for 30-35 minutes until charred around the edges.
- Prepare the Green Goddess Dressing by blending avocado, coriander, basil, green part of spring onions, lemon juice, extra virgin olive oil, salt, pepper, and a dash of water until smooth and creamy.
- In a separate bowl, mix cooked quinoa, cooked peas, white part of spring onions, parsley, olive oil, lemon juice, salt, and pepper to prepare the salad.
- Assemble the dish by adding the quinoa and pea salad to a bowl. Place the roasted cauliflower on top and drizzle with the Green Goddess Dressing.
