Instructions

  1. Prepare the taco seasoning by combining chili powder, garlic powder, onion powder, smoked paprika, dried oregano, black pepper, cumin, and salt in a bowl. Mix well and set aside.
  2. Heat a large skillet over medium heat and add a drizzle of oil. Sauté the diced yellow onion until translucent and just starting to caramelize, about 4-5 minutes.
  3. Add the ground beef to the skillet. Cook, breaking it up with a spatula, until browned and no pink remains.
  4. Stir in minced garlic and tomato paste. Sauté until fragrant and the tomato paste darkens slightly, about 1 minute.
  5. Sprinkle in taco seasoning and season with a pinch of salt. Stir to coat the beef mixture well.
  6. Pour in warm water and reduce heat to low. Simmer for 8-10 minutes, stirring occasionally, until the mixture is saucy but not watery.
  7. While the beef simmers, make the pico de gallo. Combine diced onion, diced Roma tomatoes, chopped fresh cilantro, lime juice, black pepper, and salt in a bowl. Mix gently and let sit for 5–10 minutes to marinate.
  8. Create the creamy taco sauce by whisking together sour cream, mayonnaise, water, lime juice, taco seasoning, and dried parsley in a bowl until smooth and pourable.
  9. Preheat a clean nonstick skillet over medium heat. Add a thin layer of oil to coat the surface.
  10. Place a flour tortilla in the skillet. Sprinkle cheese on one half, add a layer of the beef mixture, and top with more cheese if desired. Fold the tortilla in half to enclose the filling.
  11. Cook the taco for 2–3 minutes on the first side, pressing gently with a spatula until golden brown and crispy. Flip and cook the other side until equally crisp and the cheese is melted.
  12. Transfer cooked tacos to a wire rack or paper towel-lined tray to keep crisp. Repeat assembling and frying remaining tacos.
  13. Arrange tacos on a platter. Spoon pico de gallo generously over or alongside. Drizzle with creamy taco sauce and garnish with extra cilantro and lime wedges.
