Mediterranean Egg & Cheese Bagel Sandwich

Ingredients

  • 2 Egg
  • 0 Cilantro chopped fresh
  • 0 Salt to taste
  • 1 Bagel your choice of flavor
  • 2 teaspoons Olive Oil divided use
  • 0 Olive Oil as needed for the pan
  • 0 Cheese slices; Mediterranean cheeses like feta, mozzarella, or havarti work best
  • 0 Lettuce crisp leaves, such as romaine or butter lettuce
  • 0 Tomato sliced
  • 0 Hot Sauce harissa or Mediterranean-style, optional
  • 0 Ketchup optional

Instructions

  1. Preheat a nonstick skillet over medium heat until hot but not smoking.
  2. Crack the eggs into a bowl. Add salt and chopped cilantro, then whisk well until slightly foamy and fully combined.
  3. Slice the bagel in half horizontally. Set aside.
  4. Drizzle olive oil in the preheated skillet, swirling to coat the base evenly.
  5. Place both bagel halves cut-side down in the skillet. Toast gently for 1-2 minutes until lightly golden and crisp. Remove and set aside.
  6. Pour the egg mixture into the skillet. Immediately, nestle the bagel halves back—cut side down—onto the eggs, so the omelette spreads all around and inside the bagel holes.
  7. Once the eggs start to set around the edges but are still slightly wet on top (about 1 minute), drizzle a touch more olive oil around the edge for easy flipping.
  8. Using a large spatula, carefully flip the entire omelette-and-bagel assembly in one motion. Cook 30-45 seconds, just to finish setting the eggs.
  9. Place cheese slices over one bagel half while the omelette is hot, letting the cheese melt slightly.
  10. Carefully fold any overhanging omelette edges towards the bagel center, tucking them inside for neatness and texture.
  11. Add lettuce leaves and tomato slices on top of the cheese.
  12. Close the sandwich by placing the other bagel half on top, pressing gently to hold it all together.
  13. Slice the sandwich in half for a striking cross-section and serve immediately.
  14. Optional: Serve with a side of Mediterranean-style hot sauce, harissa, or ketchup, and pair with fresh coffee.
