Pineapple Coconut Cooler

A chilled pineapple-coconut cooler built by stirring pineapple juice, coconut water, lime juice, and a small amount of sweetener, then serving it over ice with mint. The drink is light, bright, and straightforward to assemble in a home kitchen.

Pineapple Coconut Cooler

Ingredients

  • 480 ml pineapple juice chilled
  • 480 ml coconut water chilled
  • 60 ml lime juice freshly squeezed
  • 30 ml simple syrup prepared
  • 600 g ice for serving
  • 8 g fresh mint leaves lightly bruised
  • 4 piece lime wedges for garnish

Instructions

  1. Add the pineapple juice, coconut water, and lime juice to a pitcher. If you want a sweeter drink, add the simple syrup as well. Stir until fully combined. The liquid looks evenly mixed with no syrup streaks.
  2. Fill 4 tall glasses with the ice. Divide the cooler evenly over the ice, then top each glass with the mint and a lime wedge if using. Each glass is cold, filled, and visibly garnished.
