Lemon Blueberry Loaf

Ingredients
- 1.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 1 cup fresh blueberries
- 2 tablespoons all-purpose flour
- 0.5 cup unsalted butter room temperature
- 1 cup granulated sugar
- 2 large eggs room temperature
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 0.5 cup whole milk
- 1 cup fresh blueberries coated with flour
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a medium bowl, sift together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Set aside.
- In a small bowl, mix 1 cup of fresh blueberries with 1-2 tablespoons of flour until the blueberries are coated. Set aside.
- In a separate bowl, cream together 1/2 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3 to 5 minutes.
- Beat in 2 large eggs, 1 tablespoon of lemon zest, and 2 tablespoons of lemon juice into the butter-sugar mixture.
- Gradually add the sifted dry ingredients to the wet mixture, and slowly add in 1/2 cup of whole milk until the batter comes together. Scrape the sides of the bowl as needed.
- Fold in the coated blueberries gently.
- Pour the batter into the prepared pan and bake for 55-65 minutes.
- Let the loaf cool completely before slicing and serving.
