Lemon Blueberry Loaf

Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup fresh blueberries
  • 2 tablespoons all-purpose flour
  • 0.5 cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 0.5 cup whole milk
  • 1 cup fresh blueberries coated with flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a medium bowl, sift together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Set aside.
  3. In a small bowl, mix 1 cup of fresh blueberries with 1-2 tablespoons of flour until the blueberries are coated. Set aside.
  4. In a separate bowl, cream together 1/2 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3 to 5 minutes.
  5. Beat in 2 large eggs, 1 tablespoon of lemon zest, and 2 tablespoons of lemon juice into the butter-sugar mixture.
  6. Gradually add the sifted dry ingredients to the wet mixture, and slowly add in 1/2 cup of whole milk until the batter comes together. Scrape the sides of the bowl as needed.
  7. Fold in the coated blueberries gently.
  8. Pour the batter into the prepared pan and bake for 55-65 minutes.
  9. Let the loaf cool completely before slicing and serving.
