Cinnamon Apple Loaf Cake
A moist and delicious loaf cake packed with juicy cinnamon apples and brown sugar, topped with a sweet glaze.

Ingredients
- 115 g salted butter
- 130 g granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 180 g self-raising flour
- 120 ml milk
- 2 large apples
- 2 tbsp granulated sugar
- 1 tsp cinnamon
- 60 g light brown sugar
- 1 tsp cinnamon
- 100 g icing sugar
- 2 tbsp milk
Instructions
- Prepare the cake mix by combining 115g softened salted butter and 130g granulated sugar.
- Add 2 large eggs at room temperature to the cake mix.
- Add 1 tsp of vanilla extract to the cake mix.
- Add 180g of self-raising flour to the cake mix.
- Add 120ml of milk to the cake mix. Any type of milk can be used, skimmed milk was used in the original recipe.
- Prepare the apple mix by combining 2 large peeled and diced apples with 2 tbsp of granulated sugar and 1 tsp of cinnamon.
- Prepare the cinnamon sugar by combining 60g of light brown sugar with 1 tsp of cinnamon.
- Prepare the glaze by combining 100g of icing sugar with 1-3 tbsp of milk. Use less milk for a thicker glaze and more milk for a thinner glaze. The original recipe used 2 tbsp of milk.
- Bake the cake in a 3lbs loaf tin until a toothpick comes out with just a few moist crumbs on it. Be careful not to over bake as it will result in a drier cake.
- Allow the cake to cool for about 30 minutes, then pour over the glaze. The glaze can be added while the cake is warm or cold.
