Creamy Butternut Squash Pasta With Crispy Sage

Ingredients
- 3 Tbsp Salted Butter
- 0.3333333333333333 cup Fresh Sage Leaves
- 1 Medium Yellow Onion
- 2 Garlic Cloves
- 4 cups Peeled + Cubed Butternut Squash
- 1.5 tsp Kosher Salt
- 0.5 tsp Freshly Ground Black Pepper
- 1 dash Ground Nutmeg
- 1 dash Cayenne Pepper
- 0.5 cup Water
- 1 lb Rigatoni
- 1.5 cups Whole Milk
- 0.75 cup Grated Parmesan Cheese
Instructions
- In a large skillet, melt the butter over medium heat. Add the sage leaves and spread in one layer. Cook until bubbling and the butter is starting to turn golden brown, about 2 mins. Be careful not to let the butter burn; lower the heat if needed. Remove the skillet from the heat and transfer the sage leaves to a paper towel lined plate.
- Return the skillet to the stove over medium heat and add the onion. Cook, stirring, until softened (3-5 mins), then stir in garlic and cook 1 more min.
- Add the cubed squash, salt, pepper, cayenne, and nutmeg. Cook, stirring, for 1 min, then add 1/2 cup water. Cover and simmer on med-low heat for 15-20 mins, stirring every few mins, until the squash is tender and pierces easily with a fork, and most of the liquid has cooked off. If you still have liquid in the pan, cook uncovered for 2-3 mins until it cooks off.
- Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until before it’s al dente (2 mins less than package directions), reserve 1 cup of pasta water, and drain the pasta.
- Transfer the squash mixture to a blender and add the whole milk. Blend until smooth and well combined.
- Pour the sauce back into the skillet. Cook over med-high heat, stirring, for about 3 mins until it starts to bubble and simmer, then add the cooked pasta. Continue cooking the pasta in the sauce, adding splashes of pasta water if needed to loosen it up (you may not need much), until the pasta is your desired tenderness, 2-3 mins.
