Chipotle Beef Sweet Potato Skins

Stuffed sweet potato skins with chipotle beef (or chicken, if you prefer) and melty cheddar, topped with your favorite toppings.

Chipotle Beef Sweet Potato Skins

Ingredients

  • 4 whole sweet potatoes
  • 1 pound ground beef
  • 1 whole onions
  • 1 teaspoon chili powder
  • 1 teaspoon chipotle chile powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 2 tablespoons tomato paste
  • 1 tablespoon hot sauce
  • 1.5 cups cheddar and monterey jack cheese
  • 0.5 cup bacon bits
  • 1 whole avocado
  • 0.5 cup cilantro and or green onions
  • 0.25 cup pickled jalapeños
  • 0.5 cup plain Greek yogurt or sour cream

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Scrub the sweet potatoes clean and prick all over with a fork. Place the sweet potatoes on a baking sheet and bake for about 45 minutes, or until fork-tender.
  2. While the sweet potatoes are roasting, prepare the chipotle beef. In a large skillet, cook the ground beef and onions over medium heat until the beef is browned and cooked through. Drain off any excess fat.
  3. Add the chili powder, chipotle chile powder, smoked paprika, garlic powder, cumin, tomato paste, and hot sauce to the skillet. Stir until all the ingredients are well combined.
  4. Once the sweet potatoes are done roasting, let them cool for a few minutes. Then cut them in half and scoop out some of the flesh to make a 'boat'.
  5. Fill each sweet potato 'boat' with the chipotle beef mixture. Top with cheddar and monterey jack cheese.
  6. Return the stuffed sweet potatoes to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  7. While the sweet potatoes are baking, prepare the toppings. Cook the bacon bits, slice the avocado, chop the cilantro and/or green onions, and slice the pickled jalapeños.
  8. Once the sweet potatoes are done baking, top with the prepared toppings and a dollop of plain Greek yogurt or sour cream.
