Fall Harvest Cobb Salad
A seasonal staple made with crisp apples, roasted butternut, smoky bacon & feta cheese all tossed in the dreamiest maple-balsamic vinaigrette. All the ingredients can easily be prepped beforehand. It’s a fresh & delicious way to ease into comfort food season.

Ingredients
- 1 bunch Lettuce or mixed greens
- 1 piece Chicken breast
- 2 pieces Eggs
- 4 slices Bacon
- 1 small Butternut squash
- 2 pieces Apples
- 1 cup Olive oil
- 2 tablespoons Maple syrup
- 2 tablespoons Balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon Cracked black pepper
- 1 cup Dried cranberries
- 1 cup Feta cheese
Instructions
- Prepare the lettuce or mixed greens by washing and drying them thoroughly.
- Cook the chicken breast, then dice it into small pieces.
- Hard boil the eggs, then peel and slice them.
- Cook the bacon until crispy, then chop into small pieces.
- Roast the butternut squash until tender, then dice into small pieces.
- Slice the apples into thin slices.
- Prepare the vinaigrette by combining olive oil, maple syrup, balsamic vinegar, Dijon mustard, and cracked black pepper. Whisk until well combined.
- Assemble the salad by layering the lettuce, chicken, eggs, bacon, butternut squash, apples, dried cranberries, and feta cheese in a large bowl.
- Drizzle the vinaigrette over the salad and toss until well combined.
