Creamy Mushroom Pasta In A Silky Parmesan Cream Sauce

Ingredients
- 8 oz orecchiette pasta
- 0 salt
- 0.5 cup water
- 1 tbsp olive oil
- 0.5 white onion
- 8 oz mushrooms
- 0 garlic
- 0.25 cup dry white wine
- 0.5 cup light whipping cream
- 0.5 tsp garlic powder
- 0.25 cup pasta water
- 0.33 cup Parmesan
- 1 tbsp butter
- 0 cooked pasta
- 0 Parmesan
- 0 basil or parsley
Instructions
- Cook 8 oz of orecchiette pasta in salted water. Save ½ cup of the pasta water for later use.
- Heat 1 tbsp of olive oil, sauté ½ diced white onion until it becomes translucent. Add 8 oz of sliced mushrooms, let them sit for 2–3 minutes before stirring.
- After the mushrooms have cooked for 6–8 minutes, add garlic.
- Deglaze the pan with ¼ cup of dry white wine, let it simmer for 3–4 minutes.
- Stir in ½ cup of light whipping cream, ½ tsp of garlic powder, and ¼ cup of the saved pasta water. Let it simmer until the sauce has slightly thickened.
- Add ⅓ cup of Parmesan to the sauce and stir until it becomes glossy.
- Finish the sauce with a knob of cold butter, then toss the cooked pasta in the sauce.
- Top the pasta with more Parmesan and basil or parsley before serving.
