Creamy Mushroom Pasta In A Silky Parmesan Cream Sauce

Ingredients

  • 8 oz orecchiette pasta
  • 0 salt
  • 0.5 cup water
  • 1 tbsp olive oil
  • 0.5 white onion
  • 8 oz mushrooms
  • 0 garlic
  • 0.25 cup dry white wine
  • 0.5 cup light whipping cream
  • 0.5 tsp garlic powder
  • 0.25 cup pasta water
  • 0.33 cup Parmesan
  • 1 tbsp butter
  • 0 cooked pasta
  • 0 Parmesan
  • 0 basil or parsley

Instructions

  1. Cook 8 oz of orecchiette pasta in salted water. Save ½ cup of the pasta water for later use.
  2. Heat 1 tbsp of olive oil, sauté ½ diced white onion until it becomes translucent. Add 8 oz of sliced mushrooms, let them sit for 2–3 minutes before stirring.
  3. After the mushrooms have cooked for 6–8 minutes, add garlic.
  4. Deglaze the pan with ¼ cup of dry white wine, let it simmer for 3–4 minutes.
  5. Stir in ½ cup of light whipping cream, ½ tsp of garlic powder, and ¼ cup of the saved pasta water. Let it simmer until the sauce has slightly thickened.
  6. Add ⅓ cup of Parmesan to the sauce and stir until it becomes glossy.
  7. Finish the sauce with a knob of cold butter, then toss the cooked pasta in the sauce.
  8. Top the pasta with more Parmesan and basil or parsley before serving.
