Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk
  • 0.5 cup canned pumpkin puree not pumpkin pie filling
  • 2 tablespoons chia seeds
  • 1 tablespoon maple syrup or honey, to taste
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon pumpkin pie spice or a mix of cinnamon, nutmeg, and ginger
  • 0 salt a pinch
  • 0 unsweetened almond milk a splash to adjust consistency if needed
  • 0 pecans optional toppings
  • 0 coconut flakes optional toppings
  • 0 pumpkin pie spice optional sprinkle

Instructions

  1. In a large bowl, combine the rolled oats, almond milk, pumpkin puree, chia seeds, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. Stir well to ensure all the ingredients are evenly mixed.
  2. If you prefer a thicker texture, you can add a bit more chia seeds or reduce the almond milk slightly.
  3. Divide the mixture into jars or containers with lids. Seal them and place them in the refrigerator overnight (or for at least 4 hours) to allow the oats and chia seeds to absorb the liquid and thicken.
  4. In the morning, give the oats a good stir. If it’s too thick, you can add a splash of almond milk to reach your desired consistency.
  5. Top with your favorite toppings, such as chopped nuts, seeds, coconut flakes, or a sprinkle of extra pumpkin pie spice.
  6. Your pumpkin overnight oats are ready to eat! You can enjoy them cold or warm them up in the microwave if you prefer.
