Pumpkin Overnight Oats

Ingredients
- 1 cup rolled oats
- 1 cup unsweetened almond milk
- 0.5 cup canned pumpkin puree not pumpkin pie filling
- 2 tablespoons chia seeds
- 1 tablespoon maple syrup or honey, to taste
- 1 teaspoon vanilla extract
- 0.5 teaspoon pumpkin pie spice or a mix of cinnamon, nutmeg, and ginger
- 0 salt a pinch
- 0 unsweetened almond milk a splash to adjust consistency if needed
- 0 pecans optional toppings
- 0 coconut flakes optional toppings
- 0 pumpkin pie spice optional sprinkle
Instructions
- In a large bowl, combine the rolled oats, almond milk, pumpkin puree, chia seeds, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. Stir well to ensure all the ingredients are evenly mixed.
- If you prefer a thicker texture, you can add a bit more chia seeds or reduce the almond milk slightly.
- Divide the mixture into jars or containers with lids. Seal them and place them in the refrigerator overnight (or for at least 4 hours) to allow the oats and chia seeds to absorb the liquid and thicken.
- In the morning, give the oats a good stir. If it’s too thick, you can add a splash of almond milk to reach your desired consistency.
- Top with your favorite toppings, such as chopped nuts, seeds, coconut flakes, or a sprinkle of extra pumpkin pie spice.
- Your pumpkin overnight oats are ready to eat! You can enjoy them cold or warm them up in the microwave if you prefer.
