Pumpkin Munchkins
Delicious pumpkin-flavored donut bites coated with cinnamon-maple sugar for a perfect sweet treat.

Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon ground nutmeg
- 0.5 teaspoon black pepper freshly ground
- 0.25 teaspoon salt
- 0.5 cup canned pumpkin puree
- 0.25 cup ricotta cheese
- 0.25 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoon butter melted
- 0 all-purpose flour mixture previously mixed
- 2 tablespoon milk
- 0.25 cup granulated sugar
- 2 tablespoon maple sugar
- 1 teaspoon ground cinnamon
- 2 tablespoon butter melted for rolling
- 0 Cinnamon-Maple Sugar Coating previously mixed
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or a donut hole pan with butter or non-stick spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, black pepper, and salt.
- In another bowl, whisk together the pumpkin puree, ricotta cheese, sugar, egg, vanilla extract, and melted butter (or oil). Stir well until everything is smooth.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Add milk 1 tablespoon at a time until the batter reaches a thick, but scoopable consistency (not too runny).
- Use a spoon or a small cookie scoop to portion the batter into the prepared mini muffin tin or donut hole pan. Fill each about 3/4 full. Bake for 10-12 minutes until the donut bites are golden and a toothpick inserted into the center comes out clean.
- In a small bowl, mix together the granulated sugar, maple sugar, and ground cinnamon for the Cinnamon-Maple Sugar Coating.
- After the donut bites have cooled slightly, brush them with melted butter, then roll them in the cinnamon-maple sugar mixture until fully coated.
- Enjoy the warm, spiced, and sweet pumpkin donut bites! They’re best served fresh but can also be stored in an airtight container for up to 2 days.
