Herbal Iced Tea with Mint

Cook time: 10 minutes

Servings: 4

Ingredients

  • 720 ml water divided
  • 4 count black tea bags regular strength
  • 15 g fresh mint leaves and small tender sprigs rinsed
  • 20 g honey none
  • 1 count lemon zested very lightly, then juiced
  • 240 ml water divided
  • 5 g fresh mint leaves and small tender sprigs rinsed
  • 300 g ice cubes for serving

Instructions

  1. Add 720 ml water to the saucepan and bring it just to a boil over high heat. Remove from the heat, add the tea bags and 15 g of the mint, and steep for 5 minutes. The tea is dark and aromatic but not bitter, and the mint smells fresh.
  2. Remove the tea bags, then strain the tea into the pitcher. Stir in the honey until dissolved, then add the lemon juice and a little of the zest. The sweetener is fully dissolved and the liquid tastes bright, not syrupy.
  3. Add the remaining 240 ml water and the remaining 5 g mint to the pitcher, then let the tea cool for 5 minutes before chilling it briefly in the refrigerator or by stirring in the ice in serving glasses. The tea is cool enough to serve and the mint flavor is present but clean.
  4. Serve over the ice in glasses. Use the full 300 g ice across the 4 servings. The drink is cold, lightly fragrant, and ready to sip.
