Cucumber Sandwiches

A refreshing and light cucumber sandwich with a tangy cream cheese spread, perfect for tea time or as a quick snack.

Ingredients

  • 2 slices bread sourdough, multigrain, or preferred variety
  • 4 oz cream cheese
  • 1 small cucumber
  • 2 tbsp red onion finely chopped
  • 2 tbsp scallions finely chopped
  • 1 tbsp capers drained
  • 1 lemon zest of
  • 0 black pepper freshly cracked
  • 0 olive oil

Instructions

  1. Lightly toast the bread slices until golden brown and crispy.
  2. While the bread is toasting, spread a generous layer of softened cream cheese on each slice.
  3. Using a vegetable peeler or mandoline, thinly shave the cucumber lengthwise into ribbons.
  4. Lay the shaved cucumber ribbons evenly on top of the cream cheese. Sprinkle the chopped red onion, scallions, and capers over the cucumber.
  5. Add lemon zest on top for brightness and flavor.
  6. Optionally, season with freshly cracked black pepper and drizzle with a bit of olive oil for a richer taste.
