Apple Pie Donuts

Cook time: 30 minutes

Servings: 4

Ingredients

  • 1.5 medium honey crisp apples
  • 0.25 cup water
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tsp cornstarch
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.33 cup light brown sugar
  • 2 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 0.5 tsp kosher salt
  • 0.5 tsp nutmeg
  • 0.25 tsp ground cloves
  • 0.75 cup unsweetened, non-dairy milk
  • 0.25 cup vegetable oil
  • 2 tbsp vegan butter, melted
  • 2 tsp vanilla extract
  • 0.5 cup maple syrup
  • 4 tbsp vegan butter
  • 2 cups powdered sugar
  • 0.5 tsp maple extract

Instructions

  1. Combine all stewed apple ingredients together in a skillet over medium heat. Cook for 3-4 minutes, stirring often, until apples are soft.
  2. Preheat oven to 350°F. Grease donut pan with cooking spray.
  3. Whisk together flour, sugars, baking powder, salt, and spices in large mixing bowl. Stir in milk, oil, melted butter, and vanilla. Fold in cooled stewed apples.
  4. Spoon the batter into the donut pan, OR fill a large ziplock bag with the batter, cut a hole in the corner and pipe into the pan, filling about 3/4 of the way full. Be careful not to overfill, as the donuts will rise.
  5. Bake for 13-14 minutes or until edges are lightly golden brown.
  6. Make the icing while donuts are cooling. In small saucepan over low heat, melt butter and maple syrup together, whisking occasionally.
  7. Once butter has melted, remove from heat and whisk in powdered sugar and maple extract. Cool for 2 minutes, then dip each donut into the icing.
