Cinnamon Swirl Banana Bread Bars

Cinnamon Swirl Banana Bread Bars

Ingredients

  • 1 cup ripe bananas
  • 2 eggs
  • 0.25 cup maple syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 0.75 cup almond flour
  • 0.25 cup tapioca flour
  • 2 tablespoons coconut flour
  • 1 teaspoon cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon kosher salt
  • 2 tablespoons maple syrup
  • 2 tablespoons almond butter or tahini
  • 1 teaspoon cinnamon
  • 0.33 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, whisk together mashed bananas, eggs, maple syrup, coconut oil, and vanilla.
  3. Stir in almond flour, tapioca flour, coconut flour, cinnamon, baking soda, and salt until just combined.
  4. In a small bowl, mix swirl ingredients until smooth.
  5. Pour batter into prepared pan.
  6. Drizzle 1/2 the swirl mixture over top and use a knife to create swirls.
  7. Sprinkle chopped walnuts on top, if using.
  8. Bake 23–25 minutes or until set in the center.
  9. Cool completely before slicing. Drizzle the remaining swirl mixture over top (optional).
