Blueberry Breakfast Cake
Quick, easy, and the perfect weekend breakfast. This recipe is the best way to use homemade buttermilk. Soft, fluffy, and bursting with blueberries.

Ingredients
- 0.5 cup butter
- 0.75 cup sugar
- 1 piece egg
- 1 tsp vanilla extract
- 2 cup blueberries
- 0.25 cup all-purpose flour
- 1.75 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 0.5 cup buttermilk
- 1 tbsp sugar
Instructions
- Preheat oven to 350°F. Beat together the butter and sugar until light and fluffy.
- Mix in the egg and vanilla until smooth.
- Toss blueberries with ¼ cup of flour and set aside.
- In a separate bowl, whisk together the remaining flour, baking powder, and salt.
- Add the dry ingredients into the butter mixture a little at a time, alternating with buttermilk, until combined. Gently fold in the blueberries.
- Spread batter evenly into a greased 9x13 pan. Sprinkle the top with 1 tablespoon of sugar.
- Bake for 40-45 minutes, or until a toothpick comes out clean. Let cool at least 15 minutes before slicing
