Blueberry Breakfast Cake

Ingredients

  • 0.5 cup butter
  • 0.75 cup sugar
  • 1 piece egg
  • 1 tsp vanilla extract
  • 2 cup blueberries
  • 0.25 cup all-purpose flour
  • 1.75 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 0.5 cup buttermilk
  • 1 tbsp sugar

Instructions

  1. Preheat oven to 350°F. Beat together the butter and sugar until light and fluffy.
  2. Mix in the egg and vanilla until smooth.
  3. Toss blueberries with ¼ cup of flour and set aside.
  4. In a separate bowl, whisk together the remaining flour, baking powder, and salt.
  5. Add the dry ingredients into the butter mixture a little at a time, alternating with buttermilk, until combined. Gently fold in the blueberries.
  6. Spread batter evenly into a greased 9x13 pan. Sprinkle the top with 1 tablespoon of sugar.
  7. Bake for 40-45 minutes, or until a toothpick comes out clean. Let cool at least 15 minutes before slicing
