Buffalo Chicken Stuffed Potatoes
This is a viral recipe of Buffalo Chicken Stuffed Potatoes from a couple of years ago, shared again for its delightful taste. The recipe involves baking a potato, stuffing it with a mixture of chicken, spices, cheese and buffalo sauce, and baking it again until the cheese melts.

Ingredients
- 1 piece potato
- 1 as needed oil
- 1 pinch salt
- 0.5 cup cooked chicken
- 1 as needed garlic powder
- 1 as needed paprika
- 1 as needed oregano
- 1 pinch black pepper
- 1 pinch salt
- 2 tablespoon buffalo sauce
- 0.5 cup shredded mozzarella or cheese of choice
- 1 as needed extra mozzarella
- 1 as needed homemade ranch or blue cheese dressing
Instructions
- Bake the potato with oil and a little sprinkle of salt for 1 hour at 400 degrees.
- Once potatoes have cooled a little bit, enough to handle them without burning yourself, cut them in half.
- Scoop potato filling out of potato carefully and place in a bowl.
- Add chicken, spices, cheese and buffalo sauce to the bowl. Mix together.
- Place the mixture evenly into the potatoes.
- Place the potatoes back in the oven at 425 degrees. Top with extra mozzarella and bake for 12-15 minutes or until cheese has melted. You can broil for the last couple of minutes if preferred.
- Serve the potatoes topped with homemade ranch or blue cheese dressing, according to preference.
