Broccoli Cheddar Lasagna Soup

Broccoli Cheddar Lasagna Soup

Ingredients

  • 2 cups broccoli
  • 2 cups carrots
  • 0.5 onion sweet onion
  • 2 tablespoons unsalted butter
  • 0.5 onion sweet onion
  • 1 tablespoon garlic paste
  • 3 tablespoons flour
  • 4 cups low sodium chicken broth
  • 2 cups heavy cream
  • 2 cups broccoli
  • 2 cups carrots
  • 8 oz cheddar cheese
  • 4 oz mozzarella cheese
  • 1 box lasagna sheets
  • 2 teaspoons Complete seasoning
  • 2 teaspoons Onion Powder
  • 2 teaspoons Garlic Powder
  • 2 teaspoons white pepper

Instructions

  1. Prepare your ingredients: chop 2 cups of broccoli, shred 2 cups of carrots, dice 1/2 a sweet onion, and set aside.
  2. In a large pot, melt 2 tablespoons of unsalted butter over medium heat.
  3. Add the diced onion to the pot and sauté until it becomes translucent.
  4. Add 1 tablespoon of garlic paste to the pot and sauté for another minute.
  5. Stir in 3 tablespoons of flour to the pot and cook for 1-2 minutes.
  6. Slowly whisk in 4 cups of low sodium chicken broth and 2 cups of heavy cream, then bring the mixture to a simmer.
  7. Add the chopped broccoli and shredded carrots to the pot, then cook until they are tender.
  8. Stir in 8 oz of shredded cheddar cheese and 4 oz of mozzarella cheese until they are fully melted.
  9. Break the lasagna sheets into pieces and add them to the pot, then cook until they are al dente.
  10. Season the soup with 2 teaspoons each of Complete seasoning, Onion Powder, Garlic Powder, and white pepper, then stir well.
