Broccoli Cheddar Lasagna Soup
A delicious and hearty soup inspired by @daronthechef, combining the flavors of broccoli cheddar soup with lasagna.

Ingredients
- 2 cups broccoli
- 2 cups carrots
- 0.5 onion sweet onion
- 2 tablespoons unsalted butter
- 0.5 onion sweet onion
- 1 tablespoon garlic paste
- 3 tablespoons flour
- 4 cups low sodium chicken broth
- 2 cups heavy cream
- 2 cups broccoli
- 2 cups carrots
- 8 oz cheddar cheese
- 4 oz mozzarella cheese
- 1 box lasagna sheets
- 2 teaspoons Complete seasoning
- 2 teaspoons Onion Powder
- 2 teaspoons Garlic Powder
- 2 teaspoons white pepper
Instructions
- Prepare your ingredients: chop 2 cups of broccoli, shred 2 cups of carrots, dice 1/2 a sweet onion, and set aside.
- In a large pot, melt 2 tablespoons of unsalted butter over medium heat.
- Add the diced onion to the pot and sauté until it becomes translucent.
- Add 1 tablespoon of garlic paste to the pot and sauté for another minute.
- Stir in 3 tablespoons of flour to the pot and cook for 1-2 minutes.
- Slowly whisk in 4 cups of low sodium chicken broth and 2 cups of heavy cream, then bring the mixture to a simmer.
- Add the chopped broccoli and shredded carrots to the pot, then cook until they are tender.
- Stir in 8 oz of shredded cheddar cheese and 4 oz of mozzarella cheese until they are fully melted.
- Break the lasagna sheets into pieces and add them to the pot, then cook until they are al dente.
- Season the soup with 2 teaspoons each of Complete seasoning, Onion Powder, Garlic Powder, and white pepper, then stir well.
