Chocolate Chip Pecan Banana Bread

Ingredients

  • 0.5 cup softened butter
  • 1 cup sugar
  • 2 beaten eggs
  • 4 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup pecans
  • 0 butter
  • 0 brown sugar
  • 1 cup pecans

Instructions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. In a large bowl with an electric mixer, cream together the butter and sugar on medium speed until light and fluffy (about 3–4 minutes).
  3. Add in the beaten eggs, mashed bananas, and vanilla, and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add to the wet mixture and mix just until combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan and top with the caramelized pecans.
  7. In a small pan, heat a bit of butter with brown sugar over medium heat. Add pecans and toast until coated and slightly caramelized. Set aside to cool while you prepare the batter.
  8. Bake for 55 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the banana bread rest for 15 minutes before slicing.
