Banana Bread Baked Oats

Ingredients

  • 1.5 ripe bananas
  • 0.5 cup oats
  • 0.5 cup dairy-free milk
  • 1 tablespoon peanut butter
  • 1 tablespoon maple syrup
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon vanilla
  • 1 dash cinnamon
  • 1 dash salt
  • 1 as needed banana slices
  • 1 as needed banana slices
  • 1 as needed peanut butter
  • 1 as needed chocolate chips
  • 1 as needed flakey salt

Instructions

  1. Preheat your oven to 350°F.
  2. Add 1 ½ ripe bananas, ½ cup oats, ½ cup dairy-free milk, 1 tablespoon peanut butter, 1 tablespoon maple syrup, ¼ teaspoon baking powder, ½ teaspoon vanilla, a dash of cinnamon, and a dash of salt to a blender.
  3. Blend until you get a runny batter.
  4. Transfer the batter to an oven-safe dish. Top with banana slices if you wish.
  5. Bake for 30-35 minutes.
  6. You can split the batter between two small bowls and make two servings, or add the full batter to a single larger bowl.
  7. Optional: Top with more fresh banana slices, peanut butter, chocolate chips, and flakey salt.
