Garlic Mashed Potatoes
Roasted garlic mashed potatoes with a splash of tangy balsamic vinegar for an extra kick. Perfect for a Thanksgiving table or a cozy carb craving.

Ingredients
- 0 Extra-virgin olive oil
- 1 Garlic head
- 4 lb Red Bliss potatoes
- 0 Water
- 0 Kosher salt
- 1.5 sticks Butter
- 1 cup Heavy cream
- 2 Tbsp Balsamic vinegar
- 0 Kosher salt
- 1 Tbsp Fresh parsley
Instructions
- Preheat oven to 400°.
- Drizzle olive oil over the top of the garlic head (skins and all) and wrap it in foil.
- Bake the garlic in the oven until golden and soft, about 45 minutes, then set aside.
- Add the peeled and chopped potatoes to a large pot, then add enough water to cover potatoes by a few inches.
- Season the potatoes with salt, then cover the pot and bring to a boil.
- Check if the potatoes are soft by piercing them with a knife after around 30 minutes. If the knife easily slides in, then they’re good to go. Once done, drain in a colander.
- Add the potatoes to a large bowl, then mash or rice the potatoes.
- Slowly add the melted butter, cream, and garlic to the potatoes.
- Add the balsamic vinegar to the potatoes. Season generously with salt (taste later and add more as needed), then garnish with fresh parsley for the final finishing touch.
