- 0.25 portion broth
- 0 cucumbers, thinly sliced
- 0 pickled onions
- 0 sesame seeds
- 0 chili flakes
- 0 fresh cilantro, finely chopped
Instructions
- Bring a pan to medium heat. Add 1 lb lean ground beef and break it apart as it browns. Toss in 4-5 minced garlic cloves, season with 1 tbsp smoked paprika, 1/4 tsp cayenne pepper, 1/4 tsp red chili flakes, and a generous pinch of salt. Brown it up really well until the beef is browned and almost crispy.
- In a separate pan over medium heat, add 2.5 tbsp red curry paste and 2 minced garlic cloves. Stir for approximately 2 minutes until softened and fragrant.
- Pour in 3/4 cup half-and-half (or a can of coconut milk) and 1 cup bone broth. Stir well until smooth and bring to a simmer.
- Season the broth with a couple pinches of salt, the juice of half a lime, and fresh cilantro. Stir, taste, and adjust seasoning as desired.
- Thinly slice 1/2 large red onion and top with the juice of 1 lemon and a couple generous pinches of salt. Mix well with a fork and let sit for 5-10 minutes to soften, stirring a couple of times along the way.
- Prepare 4 servings of rice of choice. You can use high protein low-carb rice, regular rice, brown rice, or quinoa.
- Add 1 serving of cooked rice to a bowl, with a quarter of the seasoned beef, and spoon over a quarter of the broth over everything.
- Top with thinly sliced cucumbers, some of your pickled onions, a couple dashes of sesame seeds, chili flakes, and finely chopped fresh cilantro.
