Avocado Chicken Caesar Salad

A hybrid between a green goddess salad and chicken Caesar, packed with creamy avocado and walnuts, and a leveled up dressing.

Avocado Chicken Caesar Salad

Cook time: 40 minutes

Ingredients

  • 1.5 lbs chicken
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sweet paprika
  • 1 tsp oregano
  • 2 pinches salt
  • 0.5 red onion
  • 2 heads romaine lettuce
  • 1 avocado
  • 1 handful fresh chives
  • 0.33 cup toasted walnuts
  • 3 tbsp mayo, sour cream, or thick yogurt
  • 1 lemon
  • 1 small handful baby spinach
  • 1 small handful cilantro and dill
  • 1 2 garlic cloves
  • 1 tbsp dijon mustard
  • 1 tbsp olive oil
  • 3 tbsp water
  • 2 pinches salt and pepper
  • 2 ounces parmesan cheese

Instructions

  1. Start with the chicken. Use 1.5 lbs of chicken, any cut you want or you can also use rotisserie chicken. If you are making your chicken from scratch, season it with 1 tbsp olive oil, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp sweet paprika, 1 tsp oregano, and a couple generous pinches of salt. Mix well then you can bake, air fry, or sear and finish in the oven at 400 degrees for 37-40 mins or until cooked through.
  2. While your chicken cooks, finely dice 1/2 red onion and place in a bowl of cold water to reduce that stinky breath situation. You don't have to do this, but it makes things less pungent.
  3. Prep the rest of your salad ingredients. Use 2 thinly shredded romaine lettuce, cube up 1 avocado, a handful of finely chopped fresh chives, and 1/3 cup toasted walnuts.
  4. Finely chop the cooked or rotisserie chicken. Then add to a salad bowl with the finely diced red onion, thinly shredded romaine, cubed avocado, chopped fresh chives, and toasted walnuts.
  5. For the dressing sauce, process 3 tbsp mayo, sour cream, or thick yogurt with the juice of 1 lemon, a small handful of baby spinach, small handful of cilantro and dill, 1-2 garlic cloves, 1 tbsp dijon mustard, 1 tbsp olive oil, 3-4 tbsp water to thin it out, and a couple pinches salt and pepper.
  6. Pour your dressing over the salad and toss well.
  7. Finely shave 2-3 ounces of parmesan cheese and serve it up however way you wish.
